Fridge Clear Out Egg Fried Rice

I’ve been working on some wholegrain recipes at the mo! Diet culture has demonised carbs, and I want to bring them back because as well as delicious and versatile, wholegrains are also great for our health.

Serves: 2

Ingredients:

The left over veggies in your fridge / freezer - chopped.

I used - 1/2 red pepper, 1 large carrot, 4 spring onions, about 6 asparagus, some broccoli, a red chill.

2 cloves garlic

1 packet precooked brown rice or other grains

2 eggs

2 tbsps oil (I used 1 rapeseed and 1 sesame), and a little more for when and if things start to stick

1 tbsp fish sauce

1 tbsp soy sauce

Toasted sesame seeds to finish

Method

Add the oil to a pan over a medium heat.

Add the garlic and gently fry until aromatic

Add all the veg and stir fry until cooked.

Add the packet of rice and fish sauce.

Beat the eggs. Turn down the heat, then add the eggs and immediately mix everything together so the eggs are evenly spread.

Finish with soy sauce to taste and a sprinkling of toasted sesame seeds.

This works great as a side or add some meat / chicken/ tofu or fish to turn into a main meal.

N.b. this works well with any veggies so feel free to get creative, you can add frozen peas, canned sweet corn, spinach, fresh herbs - whatever you like.

Perfect in a tuppaware for lunch, a balanced and colourful dish with lots of plant based variety and fibre. Enjoy!
