Blueberry Pancakes
Serves: 2
Ingredients:
100g flour (plain, spelt, wholemeal)
80g greek yoghurt
1 tsp bicarbonate of soda 1 tsp baking powder
2 eggs
1 tsp vanilla
A few handfuls of blueberries
Maple syrup
Butter / oil for frying
To serve:
Yoghurt, fruit, nuts, lemon, sugar, nutella, peanut butter, whatever you like.
Method:
In a bowl mix the flour, baking powder and bicarbonate of soda.
In another bowl mix the yoghurt, eggs and vanilla.
Slowly fold the dry mixture into the wet.
Leave in the fridge for 10 minutes, this helps the gluten do it’s thang so you get nice fluffy pancakes.
Heat a knob of butter /oil in a non stick frying pan over a medium heat.
Add about a tablespoon or so of mixture to the pan, sprinkle over some blueberries. Cook for about a minute before flipping.
Repeat with the rest of the mixture adding more butter /oil each time.
Serve with your favourite toppings.
