Dark Choc Ginger Pancakes
My claim to fame in 2017 was featuring on snapchat’s pancake day live story. I had to employ my mum as my last minute camera man, but we had a laugh and enjoyed these incredible chocolaty pancakes. I love ginger and chocolate together.
Serves: 1
1 egg
1 large ripe banana
1 tbsps oats
2 heaped tbsps flour
2 tbsps milk of choice
2 tsps ground ginger
Dark chocolate chunks / chips – plus more for melting into chocolate sauce
Oil / butter for frying
Method
Add the egg, flour, oats banana, ground ginger and milk to a high-speed blender and blitz until you have a smooth batter.
Alternatively, mash the banana with the back of a fork. Mix the mashed banana and egg in a bowl. Add the try ingredients and then enough milk to achieve the right consistency.
Heat some oil / butter in a non-stick frying pan. Pour in enough batter at a time to make about 5 American style pancakes. Wait until you see some bubbles before sprinkling each with a few chocolate chips.
Flip the pancakes and cook for another minute or so.
Build your stack before drizzling with plenty more melted chocolate.
Wickedly delicious.
