Granola Butter

If I had to take 3 foods to a dessert island, granola and nut butter would be up there, so when my friend returned from a trip across the pond with a jar of granola butter, overexcited was an understatement.

My jar lasted less than 5 days, so I immediately got to work creating my own and I’m obsessed. Hope you love it too.

Makes: 1 jar

Ingredients:

400g oats

125ml rapeseed oil

4 tbsps coconut oil

90ml maple syrup

2-4 tsps cinnamon

Big pinch salt

Method:

Pre heat the oven to 180 degrees celsius.

Add the oats to a large baking tray and drizzle with rapeseed oil. Bake in the oven for about 10 minutes.

Remove from the oven, add the maple syrup and return for another 5-10 minutes until golden. Leave to cool.

Once cooled, add the baked oats, coconut oil, cinnamon and salt to a food processor. Blend for about 5-10 minutes until you have a consistency similar to nut butter. You may want to taste test and add more salt or maple syrup. Adding more oil will also give a runnier texture.

Store in a jar at room temperature for about 2 weeks. I love mine straight from the jar best, although this also works well on toast, porridge or however you like.
