Lemon and Raspberry Bircher

Serves: 1

Ingredients:

50g oats 

1 tbsp each chia and flax (optional)

Juice of ½ lemon and 1 tsp lemon zest 

½ cup water 

½ cup milk 

2 tbsps thick Greek yoghurt 

Frozen or fresh raspberries 

Drizzle of honey 

Handful of toasted flaked almonds

Nut butter 

Method:

The night before, add the oats, optional chia and flax, lemon juice and zest to a bowl or jar. Pour over the milk and water, and leave overnight. 

The next morning, stir in 2 tbsps of thick Greek yoghurt, a handful of raspberries and honey to taste. 

Top with more raspberries, toasted flaked almonds and nut butter.
