Blistered Peach and Burrata Salad

For my first recipe I’m showcasing summery flat peaches to bring you an Italian inspired dish from my recent holiday. Think blistered juicy ripe peaches, matched with creamy burrata and salty Parma ham.

Serves: 2
Ingredients
4 flat peaches
1 tbsp rapeseed oil
1 tsp honey
1 ball burrata (150g)
4 slices of parma ham
1 bag lambs lettuce (60g)
1 tbsps olive oil
Handful fresh basil
Handful chopped walnuts
A drizzle of balsamic vinegar
Method
Preheat the oven to 180 degrees celsius.
Wash the peaches and cut in half length ways. If you slice and then twist they should split fairly easily. Take care when removing the stone.
Brush with rapeseed oil and place face down in a frying pan over a low to medium heat. After about a minute, turn the peaches over and fry on the other side. They should look blistered. Transfer into a baking dish, drizzle with honey and place in the oven for roughly 10 minutes or until soft.
In the meantime, wash the lambs lettuce, crush the walnuts, drain the burrata and tear up the slices of parma ham.
Once the peaches are soft and juicy, you are ready to plate up.
Arrange the lambs lettuce on a plate and place the burrata at the centre. Add the blistered peaches around the edges, and fill the gaps with salty parma ham. I like to cut open the burrata, season and drizzle the whole salad with olive oil and balsamic vinegar. Finally finish with a handful of crushed walnuts and fresh basil.
